One month traditional Mead taste test of my first attempt at making a Mead. With fermentation almost complete of this two gallon batch, I decided to sneak a small sample just before racking to secondary. Light honey top note with a generous yeast aroma reminding me of a white wine. Next I'm going to split this batch up into two separate one gallon batches in secondary carboys.
