Corn Malting

We've been busy experimenting with malting our own corn for use in our Roberts Original Kölsch and other brews using corn as an adjunct. We decided to make a conscious effort and evolve as a company by using mostly organic ingredients in our brews that may by some studies offer long term health benefits. However organic corn is not easy to find. The closest mill that offers it was Franks Organic in Jefferson which is just shy of a 1 hour drive from Hartford. Even though organic corn costs 3 times as much as it's GMO (Genetically modified organism) counter, the health benefits is money well spent. The malting process was not difficult but it does take constant supervision to make sure the corn does not develop mold. As always taking good notes is key! Malted organic corn is only the first step on transforming our recipes and business model using organic principals.
